TWD: Devil's Food White Out Cake
The recipe chosen for TWD this week is THE cake on the book cover, which is called devil's food white out cake. And I think this could be the recipe that most TWD-ers were dying to try out! As mentioned before, most of my baking utensils are not with me at the moment and I thought that I would have to give the recipe a miss. But my dear friend, E was kind enough to let me use her brand new, spacious and well equipped kitchen (i.e., my dream kitchen) to bake the cake. Don't you think that she the nicest person in the world? ;-)
E had all the ingredients ready when I arrived. We were happily chatting away while I prepared the batter at the same time. I always thought that I'm pretty good in multi-tasking but I was obviously wrong. That's because I forgot to include cocoa powder in the batter and I only realised my mistake when both the cake pans were in the oven. Well, it's too late to do anything to salvage the cakes and I could only hope that the cakes would turn out ok.
When the cakes were taken out from the oven, they appeared to be ok. So I let them cooled on a rack while I prepared the frosting. As this was my first time trying out Italian meringue frosting, I fumbled quite a bit and fortunately, I have E with me, and she's been a great help. After the frosting was ready, I cut the two cakes into halves. I had to trouble E to frost the cake for me because my frosting skill is really bad. :-P
The cake was quite moist, but not in a bad way though, and we think that it could be due to the missing 1/2 cup of cocoa powder. In my opinion, the cake tasted great, especially when eaten with the frosting. The recipe is definitely a keeper and the cake is something that would impress the guests. But before I start to serve this cake to my future guests, I would have to give the recipe another try and hopefully I won't miss out any ingredient again!
