TWD: Plum Crumb Cake
After a two-week absence from TWD, I'm glad to be able to take part again this week! I'll have no excuse to miss this event for the next few months because I'm now back in my home in SA and this is where I have my complete set of baking utensils!
The recipe chosen for this week is blueberry crumb cake. I knew that blueberry is not available in SA, as I've tried searching for both fresh and frozen ones for another recipe before. So I replaced the blueberry with some red and yellow plums.
The recipe is rather straightforward and simple enough for me, because it is similar to the coffee cake that I've baked many times before. So the preparation process was a breeze. When the cake was in the oven, the aroma wafting the whole house was heavenly!
I always use cake pan with removable bottom to bake coffee cake, but since Dorie suggested pyrex pan, I gave it a try and see how it went. It turned out to be a bad move. The cake was rather crumbly and it's definitely not easy to get it out from the pyrex pan. Perhaps the pan was not sufficiently greased, the bottom of the cake stuck to the pan when I tried to slide the whole cake out.
Knowing that I would not be able to get the cake out in one piece, I cut the cake into four slices, then peeled the bottoms off the pan carefully and lifted the slices out one by one. But the cake still fell apart when placed on the wooden plate. I have no choice but to assemble the fallen crumbs by inserting toothpicks from the sides of the cake, so that it would still look good in pictures. ;-)
