Fried rice with salted fish, chicken and celery Recipe

Ingredients:

Cooked rice for two persons, keep in the fridge overnight
2 slices salted fish, cut into tiny cubes
1 chicken breast, remove the skin, rinse and cut into cubes
2 stalks celery, chopped
half carrot, chopped
2 cloves garlic
Salt and pepper, to taste
Spring onions, chopped

Marinade for chicken:
1 teaspoon cornstarch
1/2 teaspoon sesame oil
Salt and pepper, to taste

Method:

1) Heat up 1 tablespoon of oil in a wok, add in salted fish. Fry until fragrant, dish up and set aside.
2) Heat up 2 tablespoons of oil, saute until the chicken is half cooked. Add garlic, stir fry until fragrant, follow by carrot.
3) Add cooked rice, celery and do a few quick stirs. Add salt and pepper, stir until combined. Dish up, sprinkle with sprint onions and serve hot.
