Crunchy Banana Cookies Recipe


195g + 9g of plain flour
1 quarter teaspoon salt
Pinch of ground cloves
50g peeled banana
100g brown sugar
113g unsalted butter, at room temperature
25g cold egg
Half teaspoon vanilla extract
35g chopped chocolate


Mix flour, salt and cloves in a bowl. Set aside.
2) Mash the banana with a fork, mix with 9g of flour. Microwave for about 2 minutes, stirring every 30 seconds until the mixture turns into a paste.
3) In a bowl, whisk banana paste and sugar using a stand mixer. Break up the banana paste and fully incorporate the sugar. Allow the mixture to cool down before proceeding to the next step.
4) Add butter, mix until the mixture is creamy, about 1 to 2 minutes. Add in egg and vanilla extract, mix until well combined.
5) Reduce the mixer speed to low and mix in the flour. Mix until just combined. Scrape the sides of mixing bowl with a rubber spatula and then stir in chopped chocolate.
6) Roll the dough and wrap with cling wrap. Let it rest in fridge for at least 2 hours.
7) Preheat the oven to 180 deg C. Roll the dough and cut out desired shapes using cookies cutters. Bake for about 12 to 15 minutes (baking time varies, depending on the size of the cookies).
