Easy Peasy Afternoon Snacks
As a person with sweet tooth, it's no surprise that I have cravings for sweet stuff most of the time.... During rainy days, I dream of having a few pieces of cookies to munch with a cup of coffee; or a slice of fruit tart on those hot and humid afternoons. When I have such cravings, I won't rush to the kitchen and whip up some pastries immediately, it's too troublesome to do so and by the time I finish, I would be too tired to eat.
Imagine my delight when I found a simple pancake recipe from a cookbook that has been sitting in my book shelves for ages. The preparation + cooking time only takes 15 minutes! The texture of the cake is a tad dry but the cream and fruits complement the cake perfectly.
I had the pancake with a glass of cold milk drink that is served with some coffee-jelly cubes and a scoop of vanilla ice-cream.
Ahhh... Life couldn't get any better than this...
Pancake Recipe
Ingredients:
2 eggs
60g plain flour
40g sugar
1 tsp vanilla essence
1 tbs olive oil
Method:
1) Mix the eggs and sugar until the batter turn pale.
2) Add vanilla essence and olive oil, and sift the flour over the egg mixture.
3) Fold the flour carefully until the last bit of flour is incorporated into the batter.
4) Lightly greased a frying pan. Cut out a circle from a piece of baking paper with the diameter of approximately 20cm. Lay the paper on the frying pan.
5) Pour 1/4 of the batter onto the pan, cover with a lid. Cook over medium heat for 3-5 minutes. 6) Spread the pancakes with whipping cream and some cut fruits. Fold the pancakes into half. Serve.
Yield: 4 pieces of pancakes
Milk + Coffee Cubes Drinks Recipe
Method:
1) Prepare 500ml of black coffee with sugar using instant coffee powder.
2) Stir in 1.5 tbs of gelatin powder while the coffee is still hot.
3) Let it cool to room temperature. Then keep the coffee mixture in the fridge for at least 3 hours.
4) Remove the coffee mixture from the fridge, cut it into 1 cm cubes. Place 1/4 of the cubes in a glass, pour milk in it. (Note: The coffee-jelly cubes are enough for 4 servings)
5) Add in a scoop of vanilla ice-cream, and sift a small amount of cocoa powder on the ice-cream. Serve.
