TWD: Pumpkin Muffins (with Pine Nuts)


I've come across quite a number of cake recipes suggesting that the cakes are best to be eaten the day after they're baked. But being the glutton that I am, do you think I would have the patience to wait? Of course not! As soon as my stuff are out of the oven and sufficiently cooled down, I'll rush to take a bite to have a feel on how it tastes like. However, it never fails to amaze me that certain cakes do taste better the next day. Dorie Greenspan's pumpkin muffin is one such example, even though she did not mention it in this particular recipe.

As I need to submit a post for TWD today, I baked a batch of pumpkin muffins yesterday evening, and I had two as supper later on. I didn't like the muffins then, I thought the taste was a tad bland and the pumpkin were not distinctive enough to leave a lasting impression.

However, my opinion of the said muffins changed just a short while ago. I was in the midst of writing up this post and I suddenly felt a bit hungry. I grabbed a muffin from the kitchen and I'm surprised that it tastes much better today. The muffin has developed a fuller flavour, and the spices definitely go well with the pumpkin. I had to delete all that was written before, and rewrite the whole post. ;-)

Interesting! I've never heard of muffins tasting better the next day. Usually by then they've lost that certain just-baked aroma about them, which I love. These look very special indeed.

I find that anything with spices is better the next day - things just meld together a lot better by then. Nice looking muffins.

Not only muffin, some food also tastes good after cooling off and over night. Your muffins (n coffee) are so Gourgeous! Can I have a cup of coffee too? ;P
