Tomyam Baked Chicken


This is another recipe from my archive. It's a dish that I cook very often in SA, as ingredients for Thai cooking are easily obtainable and not as expensive as Chinese ingredients. But more importantly, it's extremely easy to prepare and yet it tastes so yummy!

Tomyam Baked Chicken

Ingredients:
6 chicken drumsticks with thighs

Marinade:
8 shallots
5 garlic cloves
4 kaffir lime leave
2 tbs store bought tomyam paste
2 red chillies
5 chilli padi
Salt and sugar, to taste


Method:
1) Grind all marinade ingredients with a blender until fine, remove and set aside.
2) Rinse the chicken pieces and drain well. Mix with the ground ingredients and marinate for at least 1 hour.
3) Wrap the chicken pieces with a piece of aluminium foil, bake in the preheated oven at 200 deg C for about 30 minutes, or until cooked. Serve.
