TWD: Banana Coconut Ice Cream Pie
The recipe chosen for TWD this week is perfect for summer. It has banana blended into chocolate ice-cream, and a base that is made of shredded coconut and butter cookies. But I find that the coconut base lends a more complex (or should I say, incompatible?) flavor to the pie. In my opinion, the coconut base would pair well with vanilla ice cream, or, chocolate ice-cream and a simple biscuit base combo. Having said that, I still enjoyed having the pie, and I will definitely give the recipe a try again, using a different ice cream and fruits combo!
From my picture, you might be wondering where the pie is! Well, the recipe calls for a pie dish, but I made only 1 quarter of the recipe and so I used two small cake rings instead. The "pie" was then topped with caramalised banana slices and chopped pecans.

Banana and coconut, I think it's a great combo with the cooling effect. Wonderful dessert!
