TWD: Banana Coconut Ice Cream Pie


The recipe chosen for TWD this week is perfect for summer. It has banana blended into chocolate ice-cream, and a base that is made of shredded coconut and butter cookies. But I find that the coconut base lends a more complex (or should I say, incompatible?) flavor to the pie. In my opinion, the coconut base would pair well with vanilla ice cream, or, chocolate ice-cream and a simple biscuit base combo. Having said that, I still enjoyed having the pie, and I will definitely give the recipe a try again, using a different ice cream and fruits combo!

From my picture, you might be wondering where the pie is! Well, the recipe calls for a pie dish, but I made only 1 quarter of the recipe and so I used two small cake rings instead. The "pie" was then topped with caramalised banana slices and chopped pecans.

That looks great to me. I usually don't make pies because, no one eats them but you came up with a way to do it, and have it manageable.

those bananse look good and i don'te ven like bananas! I did a twd rewind...lenox biscotti... b/c bananas/coconut are not my thing :)

the caramelized banana slices are a nice touch! i'd imagine you could take this pie in a lot of directions, flavor-wise.

Your pie looks wonderful! I made the chocolate version but didn't like it. I made a second attempt with a mini pie shell, vanilla ice cream and caramelized bananas in rum sauce - so much better!
