Stir-fried Sweet Potato Leaves with Dried Shrimps Recipe

Ingredients:
300g Sweet Potato Leaves
4 peeled shallots
3 cloves peeled garlic
4 fresh red chillies
cooking oil
3/4 tbsp dried shrimp paste (belachan)
20g dried shrimps (washed and drained)


Method:
1) Cut sweet potato leaves into 5cm lengths. Wash and drain.
2) Coursely pound shallots, garlic and chillies using a mortar and pestle. Set aside.
3) Heat oil in a skillet. Add pounded ingredients, dried shrimps paste and dried shrimps. Stir-fry until fragrant.
4) Add in the stalk of sweet potato leaves first, dry until just about soft, then add leaves. Continue to stir-fry until vegetable is cooked but still slightly crisp.

I love sweet potato leaves too! We call it kangkong. I just planted some in my garden and I'm looking forward to trying out your recipe. It looks delicious!
