TWD: Russian Grandmothers’ Apple Pie-Cake
The recipe chosen for TWD this week is Russian Grandmothers’ Apple Pie-Cake, which is a kind of apple pie-like pastry with a soft dough as crust.
The recipe calls for a 9X12-inch baking pan but since I halved the recipe and I do not have any smaller baking pan, I've decided to make it into individual small pies in ramekins instead. As I was not able to estimate how many ramekin I need, I went ahead to grease all 4 ramekins (diameter of 3.5-inch) that I have on hand before I rolled out the pastry. I didn't expect to use only two ramekins before the dough ran out... and was left with a lot of chopped apple instead. But it's a good thing afterall, since I'm all alone at home and I'm certainly glad that I will not have any leftover that needs to be kept in the fridge for days! And oh, did I mention how much easier it is to eat from ramekin in front of TV too, without getting a crumbly mess all over the place? ;-)

I bought my glass ramekins from Robinsons' few years ago. ha! I'm the opposite, now that I've got the glass ones, I feel like having the opaque ones. ;-)
