TWD: Walnuts & Hazelnuts Honey Sticky Buns


I've mentioned before that I'm a lazy cook... and I still am. I tend to choose simple and straightforward recipes to try out over complicated ones. And when I come across any recipes that are over two pages long, my mind starts to wander halfway through and so far, I don't think I've ever finish reading any of such recipes. Pecan honey sticky buns is one of those recipes that I would usually choose to ignore if I hadn't join the wonderful group of TWD. Because of this weekly baking event, I'm kind of "forced" to try out any recipe that is selected for the week. Well, I'm really glad that I gave the sticky bun recipe a try though, at least from now on I can proudly say that I know how to make brioche. :-)

The sticky buns were prepared over two days. The first day was spent on kneading the dough and proofing in the fridge, and then preparing the glaze, filling and finally baking on the next day. As this is my first time making brioche, I was surprised that it requires such a huge amount of butter for the dough. Since butter is used in the glaze as well, I thought it would be better to omit butter from the filling. And instead of using pecans, I used walnuts and hazelnuts which I have on hand.

The sticky buns do taste great but would I make it again? Well, probably not. The thought of consuming so much butter and sugar again really scare the hell out of me. ;-)

Hazelnuts sound delicious! I'm sure you could reduce the amount of butter in the dough and never notice it...

Thanks for the lovely sticky buns, they were so yummy! I had it for dessert after dinner and again the next morning for breakfast. The toasted nuts added such a good crunch to the soft buns. Absolutely worth every bit of your effort :)
