Steamed Chicken with Salted Fish and Fungus


We couldn't get any internet connection since yesterday and we were told that the whole SA was affected, due to either earthquake or a ship hitting the cables(??). We have no idea whether this is true yet, but the root cause of the problem sounds bizarre to me. Anyway, I managed to get connected about 2 hours ago, but the internet speed is much slower than usual and I get frustrated waiting for the pages to load. So I'm going to end the post here with an easy peasy recipe as follows. If you're busy or not in the mood of cooking, but you still feel like having a good meal, give the recipe a try!

Steamed Chicken with Salted Fish and Fungus Recipe

Ingredients:
1/2 chicken
Ginger, 5-cm knob and cut into thin strips
2 red chillies, finely chopped
20g salted fish, diced
10g black fungus, soaked overnight and cut into strips
10g white fungus, soaked overnight and cut into strips

Seasoning:
1 tbs oyster sauce
1 tsp sugar
1/2 tsp chicken stock granule
pepper, to taste
1/4 tsp sesame oil
2 tbs Shaoxing wine
1 tbs fried garlic oil
5 tbs water
1 tbs cornstach


Method:
1) Rinse the chicken pieces, drain well. Mix with remaining ingredients and seasoning, marinate for at least 1 hour.
2) Steam (in a steamer or a wok half filled with water) the marinated chicken pieces for about 25 minutes, or until fully cooked. Dish out, serve.

I had the same proplem too. But I m in Malta ha A cable of internet got cut off and I didn t have any connection now its back but its so slow :( This dish looks so easy and delicious :) thanks
