TWD: Berry Surprise Cake


The recipe for TWD this week is berry surprise cake, chosen by Mary Ann of Meet Me in the Kitchen. As I baked this cake two weeks ago, I can't remember now whether I made a quarter or half portion of the recipe.

Anyway, berry surprise cake is made of genoise cake with whipped cream frosting and cream cheese & berry mixture in the center. Using two mini chiffon cake pans (3-inch diameter) to bake the genoise cakes as part of my improvisation allowed me to skip the part on creating a hollow in the center of the cakes. As a result, my cakes would already have been centre-hollowed when baked. Due to lack of space, I filled the hollow part of my "chiffon" cakes with only cream cheese. Just before the cakes were served, I covered them with whipped cream and placed some chopped strawberries on top.

The cakes were delicious, not overly sweet and I always adore the combination of cream cheese and strawberry. If you want to give the recipe a try, head over to Mary Ann's blog for recipe!
