TWD: Strawberry Blanc-Manger


Susan of Sticky, Gooey, Creamy, Chewy has chosen raspberry blanc-manger for TWD this week. I made this dessert two weeks ago when I was still in SA. Do you remember that I need to clear my pantry before I leave SA? Well, I'm glad that this recipe came up as one of the choices for this month, because I took the opportunity to use up all the frozen strawberries in the fridge!

I made half a batch of the recipe using 3 small ramekins. Taste wise, I find that it's kinda bland. The texture of the dessert was quite gritty too. Well, the store-bought ground almond that I used could be too coarse for this recipe, or maybe it's meant to be this way. But if I were to make this dessert again, I'll definitely add more sugar to the batter and also make sure that the almonds are finely ground. I may not be crazy over blanc-manger but I have to say that it looks pretty with dots of strawberries on it.

WOW! I'm wondering where you made that from... I'm on my knees if you made it from temporary Penang!!! Hopefully, you had made this in advance... before your big move.

Anywho. It's ven more beautiful than usual, if I think that you made this under makeshift conditions!!!

If I may... should you make this again, try using roasting whole (or blanched) almonds and grind them yourself in a coffee grinder or in a food processor. The roasting gives amazing flavours to the desert, and the last minute grinding ensures fresh and pronounced taste. I always roast all the nuts I use... and try to grind them myself. There is no comparison.

Am I the only one who sees a smiley face in your dessert? Maybe the beautiful layout of your photo just makes me smile. Well done!
I ground my own almonds and it turned out very gritty for me too. I guess I just had in my head that this would be really smooth and velvety. However, yours look absolutely beautiful!! Love the strawberries on top!

I definitely agree with your changes - I'm a sweets person, so this was a little too much cream and not enough sweet for me as well. I love the wooden spoon you have in the picture though; I'm such a sucker for spoons!
