TWD: Fresh Mango Bread


Kelly of Baking with the Boys has chosen fresh mango bread for TWD this week. And the timing couldn't have been more perfect, as May is the season for alphonso mango from India!

I was first introduced to this extremely sweet and juicy mango when I went to India in 2005 and I was instantly hooked on it. That was the best mango I've tasted so far. Imagine my delight when I discovered that local supermarkets started to stock up on alphonso mango about two weeks ago, and since then, I've been having them almost everyday.


This is my first time using mango in baking and it certainly won't be my last! The mango bread is delicious, but I find that the ground ginger is slightly overpowering. I will reduce the amount if I were to bake it again. This is a great recipe and I really like the bread, but I only had half a slice because I really need to lose some weight. My hubby brought it to the office the next day and his colleagues like it too!

I love its chunkiness and rusticity... I chickened out and chopped my mango so small, it was barely noticable! I hate mango, but because I decided long ago, that this baking group would take me places I might not go otherwise... I still made and ate it... and loverd it.

I'm positive yours was just as great!

Is it really bread, or the name is? I thought it looks nicely cakey to me. Yum. Bear loves mango and he should like this. I'm afraid Kelly's blog isn't taking me anywhere to the recipe...Hmm...

Your bread is awesome! Must give it a try soon. Btw, I personally prefer Pakistan mango bcos of its creamy texture. Give it a try if u can find one. ;)

I've never heard of alphonso mangoes but now I'm going to be on the lookout for them because I love mangoes! Your bread looks soo delicious! I love your photos, how it focuses on one item and makes the other item a little blurry.

Your bread looks fabulous! I cut back on the ginger in mine and added cardamom, and it was a nice flavor combination.

Beautiful bread. I would guess the mango would determine how flavorful the loaf is. Great taste.
