Espresso Chocolate Shortbread Cookies

The recipe for TWD this week is chosen by Donna of Life’s Too Short Not to Eat Dessert First. I must have been half asleep when I baked these cookies last night, or I was too distracted by the comedy shown on TV. Instead of rolling the dough flat and let it rest in the fridge, I misinterpreted the recipe and shaped it into a log. I only realised my mistake when the cookies were baking in the oven. Anyway, the shortbread is crisp and has a melt-in-your-mouth texture, it tastes really good!

I almost did the same thing!! But then remembered the bag trick.

I honestly think these look much better than mine!! The chips stand out more and I bet they were a bit easier to slice.

I made your nectarine cake with berries but changed it up a bit and it turned out great. This recipe is a must. I cant wait to try it. YUMMY YUMMY YUMMY!

I like the round shape, too. The log way is sometimes the easier way to go, I think. They look great.

How come your biscuit didnt look dark and what did you add into your cookies as it looks like cranberries.

Hi all - Thanks for the comments!

Piggys @ 18/10/10 - I only had chocolate chips in the batter, no cranberries though. To be honest, I'm not sure why my cookies turned out lighter in colour too.
