TWD: Gingered Carrot Cookies


Natalia from gatti fili e farina has chosen gingered carrot cookies for TWD this week. I've made carrot cake shortbread before and so this is not my first time baking cookies with carrots.

These gingered carrot cookies are absolutely delicious! The cookies are spicy and chock full of ingredients - shredded carrots, coconuts, walnuts and raisins. Crunchy on the outside and slightly chewy on the inside, they taste really great with a cup of coffee!
