TWD: Tender Shortcakes

Two of my favourite fruits - mango and lychee are in season in Taiwan at the moment and I can't resist buying them whenever I go to the market. Another fruit that starts to appear more often in the markets recently is a kind of small melon. The flesh is thin and light green in colour, and it's very sweet too!

Since I have these three fruits at home, I decided to use them for tender shortcakes, which is a recipe chosen by The Tortefeasor for TWD this week. Shortcakes are similar to scones or biscuits. Fluffy, crumbly and smells so good when they're fresh out of the oven, I had 3 pieces at one go!

If you want to give the recipe a try, head over to Cathy's blog!

Oh, I love your tropical spin on these shortcakes! I don't think I've ever had lychee - I need to keep my eyes out for some! The mango had to be fabulous with these. Glad you enjoyed them - they look fantastic. Thanks so much for baking along with me this week!

I'm jealous of your lychees - never had them, but they always sound wonderful. Nice looking shortcake too!

Nice looking shortcake! remind me of the strawberry shortcake cartoon! Lovely!
How fortunate you are to have all that exotic fruit to play with. I bought manogsteen on an impuls at the store and tossed it on my shortcakes. Even though it was good I bet it doesn't have even a fraction of the flavor what you get in Thailand!
