SHF - Citrus
When I found out that citrus is the theme of Sugar High Friday for this month, I got very excited! I'm dying to try out a few recipes that I have with citrus as one of the ingredients.
I'd decided to bake Lemon Cake with Orange Syrup, a recipe from Donna Hay's Modern Classic 2. The cake turned out to be soft and the lemon blend well with orange syrup. Perfect for afternoon tea.
This is the recipe of Lemon Cake with Orange syrup:
Ingredients:
175g butter
165g caster sugar
3 eggs
1 tbsp grated lemon rind
2 tsp lemon juice
200g plain flour
2 tsp baking powder
2 tbsp poppy seed
Orange syrup
225g sugar
250ml orange juice
50g shredded orange rind
Lemon rind and lemon juice
Instruction:
To prepare cake batter:
1) Preheat the oven to 160C. Grease two muffin tins.
2) Place butter, sugar and lemon rind in a bowl and mix until light and creamy.
3) Add the eggs one at a time and beat well.
4) Sift the flour and baking powder and blend in to the mixture.
5) Add the lemon juice and poppy seed.
6) Spoon the mixture into the muffin tins.
7) Bake for 30 minutes or until cooked when tested with a skewer.

To prepare orange syrup:
1) Place all ingredients in a saucepan over low heat. Stir until the sugar is dissolved.
2) Turn to medium heat and let it boil until it turns syrupy.

Serve the cakes with orange syrup.

Would like to try your recipe. Saw eggs mentioned in your "Instructions" but not listed in your "Ingredients". So how many eggs to add?
